Wild Rice Chicken Soup

This is the greatest soup you will ever have. It’s creamy, full of protein, vegetables, and carbs which makes it a great comfort food. If you are feeling sick, or if it’s cold outside, this soup will make you feel cozy inside. A family recipe to share with everyone, Wild Rice Chicken Soup!

My wife and I have been doing something fun for dinners every week. We pick something that we haven’t had in a long time or have never made before and make it for one of the weeks meals. My choice was Wild Rice Chicken Soup, which is a family recipe I got from my Mom. What I like about it, you can make a bunch and have left overs.

I’m going to give you the ingredients I used because it turns out amazing. But you can change the ingredients to anything you want. Or add ingredients to make it your own. Pass this recipe onto your friends and family and let them enjoy this amazing comfort.

Ingredients In The Wild Rice Chicken Soup:

Below are the ingredients you can use to make your amazing soup. Of course you can change any type or quantity to make it your own.

  • Chicken: This can be two or three chicken breasts boiled and shredded. I prefer buying a whole chicken from Costco, eating some of it, and the rest goes into the soup.
  • Celery: Good size pieces of celery and include the heart and leaves for a touch of flavor.
  • Carrot: These can be whole baby carrots or you can use a large carrot chopped up.
  • Onion: Either a white or yellow onion, medium size. I used a half of onion but feel I could have use a whole onion.
  • Mushroom: Our favorite mushroom is Chanterelle but you can use any mushrooms if you want.
  • Chicken Broth: An entire box or you can make about 3 cups with the cubes. We also get this from Costco.
  • Cream of Mushroom: This can also be Cream of Chicken. Making your soup creamy and flavorful.
  • Other Optional Veggies: This can be peppers, broccoli, cauliflower, zucchini, etc.
  • Wild Rice: We prefer the Wild Canadian Rice but you can use any rice you would like. This will also affect the time it takes to cook the meal.
  • Garlic Powder
  • Onion Powder
  • Pepper/Salt: To taste.

Ingredients

2 cups shredded chicken (cooked)

3 celery stalks (can include heart and leaves for taste)

1 cup baby carrots or 1 Large carrot

Medium onion (white or yellow)

1 cup mushrooms

48oz Chicken Broth

1 cup Wild Canadian Rice (any rice and amount will do)

Spices to taste (start out with these amounts)

1 tbsp of each

garlic powder

onion powder

creole seasoning

pepper

tsp salt

If you want a more creamier soup

32oz Chicken Broth (instead of 48oz)

10.5oz can Cream of Mushroom soup

8oz Half and Half

Cooking Instructions for Wild Rice Chicken Soup

Step 1

Start with a big pot and heat on low to medium. We don’t want to over cook this, it’s a better slow cook meal. Then we are first going to add the cooked chicken. I cover the bottom of the pan with the chicken, that’s how I know I have enough.

Step 2

Then cut up the harder vegetables, we are going to let these cook for a little while about 10 minutes. Celery, Carrots, Special Ingredient. While your chicken and hard vegetables are cooking, cut up your softer veggies. Mushrooms and onion.

Step 3

After the 10 minutes, throw in your Mushrooms and Onions and Chicken Broth. This is where you can also throw in all of your seasonings. Let this cook covered for about 20 minutes. You can also test the flavor and add more seasoning if desired.

In this step, if you want a creamier soup and not brothy you will want to put the cream of mushroom and half and half in. This will give it a nice creamy consistency. Again, the amounts can be more if you want a more soupy texture.

Step 4

After you have let the chicken and vegetables cook on low/medium now it’s time to put your rice in. Our Wild Canadian Rice to 55 to 60 minutes to cook. If you are using just regular rice then it might only be 20 minutes or so. If that is the case, then maybe let your veggies cook another 10-20 minutes.

Once finished cooking, dish up and let stand for a minute before serving. The soup will be very hot. Now put on a show, spend some quality time with family, or whatever you like to do during meal times. I hope you enjoy like my family has enjoyed.

If you are into pairing wines with your meal, I would pair this one with two different types of wine depending on the way you made your soup. Just the broth, an unoaked Chardonnay or Pinot Gris.
